Creamy Cilantro Dressings

Ingredients
  

  • 1 cup chopped cilantro
  • 1 clove garlic (eliminate if FODMAPs are a problem)
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 6 tablespoons mayonnaise (I like olive oil mayo, but you can use any kind you like)
  • ¾ teaspoon salt
  • Pepper to taste

Method
 

  1. Place the cilantro, olive oil, lime juice, garlic (if you’re using it), and salt in a food processor and blend until smooth.
  2. Add the mayo and chill before serving.

Notes

This creamy dressing is fabulous on everything from tacos, burritos, bowls, sandwiches, wraps, roasted vegetables, to grilled meats. I’ve eliminated the garlic to make it FODMAP friendly, but you can add in 1 clove of minced garlic if FODMAP’s aren’t an issue for you. Nutritional info does not include garlic)
