- Place the cilantro, olive oil, lime juice, garlic (if you’re using it), and salt in a food processor and blend until smooth.
- Add the mayo and chill before serving.
Notes
This creamy dressing is fabulous on everything from tacos, burritos, bowls, sandwiches, wraps, roasted vegetables, to grilled meats. I’ve eliminated the garlic to make it FODMAP friendly, but you can add in 1 clove of minced garlic if FODMAP’s aren’t an issue for you. Nutritional info does not include garlic)
